Simply....At very large volumes the economies of scale become minimal thus some considerations of risk mitigation prevail. On group level there are approx 420 Airbus 320 family aircraft, with ITA joining the group and some growth we may speak soon about around 500.
The double engine strategy was planned from the beginning , where available - LH and Swiss planned to become the PWs, EW, SN and OS the LEAPs. OS got PW altough otherwise planned, so let's see if there would be a switch back.
On regional aircraft and long haul where numbers are smaller, there is an alternate between the models between the sizes, typically with the best suited model for a certain size chosen. 789 fits better at OS because of the range, A350 better to Swiss due to more space (and First offering) and so on.
IAG is dealing in the same way, eg by switching the Vueling fleet to B737 and keeping the network brands with A320 family.
