Brussels Airlines serves meals of starred Julien Lahire

Starting April 1st Brussels Airlines will serve dishes prepared by Star Chef Julien Lahire of Le Moulin Hideux to its Business Class guests on long haul flights to the US and Africa. The chef has created a menu based on local ingredients typical for the region Luxemburg.

As an ambassador for Belgium, Brussels Airlines has a tradition of supporting Belgian talent and to bring Belgian top quality across the borders of its home country. On board of its flights the airline offers a selection of Belgium’s finest beers and wines, pralines, waffles and also cookies.

In order to reinforce its ambassadorship, the airline started the Belgian Star Chefs program to offer its guests a taste of the internationally acclaimed Belgian cuisine. Every season, another Michelin-starred chef from one of the 10 Belgian provinces creates a menu for the Brussels Airlines Business Class using regional products. In November a first and successful partnership was launched with Geert van Hecke from De Karmeliet (Brugge).

For the spring season (April-July), it’s Julien Lahire from “Le Moulin Hideux” who presents his creations on board Brussels Airlines’ long haul flights to the US and Africa. Julien and his wife Yolande are the fourth generation of this wonderful Michelin starred restaurant and hotel. Set in the heart of the Semois Valley in the Ardennes, the restaurant is part of the Auberge du Moulin Hideux, a magnificent 17th century mill that has been converted into a hotel. The cuisine is rooted in the local region, with game being the speciality of the house.

Today the chef presented his first Belgian Star Chef menu for the month of April. As an appetiser, Julien Lahire chose foie gras with mango and smoked eel and salted mixed nuts with wasabi. For the starter he proposes chicken ballotines with walnuts presented with iceberg salad and crisp vegetables. The main course is a lamb’s shepherd’s pie with celery mousseline.
