When you're +2m tall and have broad shoulders every millimeter counts. What is the benefit if you arrive half broken due lack of space? You might have a clearer head but your body and limbs will be killing you. Actually I don't find the UA787 too bad. Ok, there is less room compared to a UA772 and a SNA330, but the difference in cabin pressure and air quality are also important to me and these are much better in the dreamliner. I can really feel the difference. The trip might be a little less comfortable, but the recuperation is much better.
But it's probably different for everybody.
