Namur top chef Pierre Résimont creates menus for Brussels Airlines

Share

As from May 1st, a new Belgian chef presents his Business Class menus on Brussels Airlines’ long haul flights. This time it is chef Pierre Résimont of restaurant L’Eau Vive  who has concocted six menus, based on local produce from the Namur province.

After first successful collaborations with Geert Van Hecke of De Karmeliet (West Flanders), Julien Lahire of Le Moulin Hideux (Luxembourg), Thomas Locus of Bistro Margaux (Flemish Brabant) and Eric Pankert of Hotel Zur Post (East-Belgium), Brussels Airlines continues its Belgian Star chefs program with Pierre Résimont. During the next six months he will serve his menus to Business Class customers on long haul flights to the US and Africa.

Since 1990, Pierre and his wife Anne have been at the helm of the Michelin-starred restaurant L’Eau Vive(**), in Profondville, just outside Namur. A small 17th-century mill set in wooded surroundings, L’Eau Vive has a charm all of its own. La Verrière, a glass canopy built as an extension to the old building, lets guests enjoy the beautiful garden with views on a river, the Burnot.

The menus he has devised for Brussels Airlines include typical Belgian dishes with a modern interpretation. The first menu, served in May, starts with an appetizer of asparagus with Muscat wine, followed by foie gras served with rhubarb and lemon gingerbread. For the main course Pierre chose to serve a fillet of cod in a Vieux Brugge crust. The chef has also selected a local beer to be served with his dishes: Blanche de Namur (Brasserie du Bocq).

As an ambassador for Belgium, Brussels Airlines has a tradition of supporting Belgian talent and to bring Belgian top quality across the borders of its home country. On board of its flights the airline offers a selection of Belgium’s finest beers and wines, pralines, waffles and also cookies.

“We are delighted that we were able to yet again work with a very talented and enthusiastic chef for our Belgian Star Chefs program. For the fifth time, the cooperation has been very successful so far. We look forward to hearing the feedback of our Business Class guests”, says Anne Tricot, VP Customer Experience Brussels Airlines.

“I am very honored to be the next Belgian Star Chef to be featured on board Brussels Airlines flights. It was a challenging task to create dishes for the Business Class travelers, but I think we succeeded in presenting six great menus. I hope Brussels Airlines guests will enjoy them”, says Pierre Résimont.
